香橙拜拜蛋糕


在我的印象里,
 我好像从未做过香橙口味的戚风蛋糕。
 今天我看见了,
 Little Thumbs Up这个月的主题是Orange
我也想试试香橙味的戚风蛋糕。
 这是我第一次参与,
 希望以后也可以多参与此类活动。
 距离上一次的绿茶蜂蜜拜拜蛋糕,
 也很久没做这拜拜蛋糕了。
 不如这次就来个香橙拜拜蛋糕,
 给它特别一点,
 再来个香橙酱+芝士奶油做夹层。
 我喜欢芝士!
 难怪我就是无法减肥成功,
 都被芝士给毁了。哈哈!
 食谱取自Qi Qi In The House 
蛋糕里不是用橙汁,
而是用香橙泥的呢!
 可想而知,
 香橙的味道会有多浓!
 爱戚风,爱香橙口味蛋糕的,
 千万不可错过!
 肯定不会后悔的啦!^^

食谱: 8寸圆活动模
 A)
低粉 - - - - - - - 64g
粟粉 - - - - - - - 16g
油 - - - - - - - -  32g
牛奶 - - - - - - - 40g
香橙泥- - - - - - 93g
蛋黄 - - - - - - - 4个

B)
蛋白 - - - - - - - 4个
糖 - - - - - - - - 64g
塔塔粉 - - - - - 1/2汤匙
盐 - - - - - - - - 1/8汤匙

香橙泥:
 *香橙以粗盐搓洗干净。锅里倒入没过橙孑的水,将橙子放入,小火煮30分钟。一直煮到用筷子能很轻松的扎透橙子。取出橙子,待泠却后去籽,切成小块,放入搅拌机或料理机搅碎成泥即成。

做法:
1. 油、牛奶和香橙泥混合均匀。筛入混合的低粉和粟粉,用刮刀拌匀。加入蛋黄拌匀,既成面蛋黄糊。

2. 蛋白加盐打至粗泡,加入塔塔粉。糖分3次加入,打发至中性发泡。分次与蛋黄糊翻拌均匀。

3. 入模,轻敲出气泡,送入已预热烤箱。145℃烤10分钟,取出蛋糕,迅速在蛋糕表面用利刀划十字,放回烤箱继续烤40分钟或至熟。

4. 取出倒扣,待凉后即可装饰。
夹层内馅 - 香橙芝士霜:
香橙淋酱 - - - 一颗橙汁的量
鲜奶油 - - - - 120g
乳酪 - - - - - - 100g

香橙酱:
* 香橙汁、1颗全蛋、1颗橙皮屑、10g 糖 和1/4茶匙 燕菜粉 混合均匀。隔水煮至松发,过滤。加入5g牛油和5g植物油拌匀至顺滑,待稍冷即可使用。为免其凝固,必须时常搅拌。
组装:
1. 奶酪在室温软化。
2. 鲜奶油加1汤匙糖打发至中性发泡。软化的乳酪搅拌至松发,与打发的鲜奶油拌匀。装入挤花袋。

3. 蛋糕横切成3片。取一片蛋糕,挤上适量的芝士奶油霜,抹平。在外围绕着再挤一圈作为一道墙,倒入适量的香橙酱在圈内,再挤上芝士奶油霜盖着淋酱,盖上一片蛋糕。重复此动作至完成3片蛋糕,放入冰箱冷藏数小时即可切片享用。

      yes, i cut a cross after 10 mins bake in the oven and let it continue bake till cooked.

  3. I baked this cake and the top was flat like yours which looks different from the ones I saw at other blogs. Thought mine didn't turn out well. Thanks for sharing this post. Now I can bake this again.

      Yea,mine are flat for this cake,its collapse abit after came out from the oven.The one you saw is it from QI Qi In The House?Her cakes are so nice! my first baibai chiffon's top are round and dome but this one not. Abit disappoint actually.Keep it on,you will have a nice dome top baibai chiffon one day and hope I'll too~ (^_^)
